FERMENTED TURMERIC & HEMP MAYO


My Son Dylan and I came up with a fantastic medicinal turmeric based mayo to have drizzled over one of our super soul food bowls for dinner. It can also be used as you would any regular mayonnaise, just that this one is raw and vegan.

The hero of this dish is the Fermented Turmeric but you can quite happily replace that with just normal fresh turmeric and/or powdered turmeric.



To make the Fermented Turmeric all you need is a good thumb of fresh organic turmeric sliced into small thin batons, left in a brine for about a week with a good tablespoon of peppercorns. To make a brine, take 1 cup pure water and add 1 teaspoon celtic sea salt, its as easy as that. The fermentation process increases the bio availability of the curcurmin (what gives turmeric the yellow pigment) making this a fantastic gut health food. Once its fermented you can just store in the fridge to use when you need.

Fermented Turmeric & Hemp Seed Mayo

Ingredients:

1 cup hemp seeds

2 tablespoons of the fermented turmeric batons

1 teaspoon celtic salt

1 teaspoon dried turmeric powder (adds colour)

1 tablespoon organic maple syrup

juice of 1 whole organic lemon

1/4-1/2 cup pure spring water

1/2 cup olive oil

Method:

Add everything to the blender except the olive oil and blend till its smooth and creamy, then slowly drizzle the olive oil into the blender, while its on its lowest speed till its all incorporated, thick and velvety. adjust salt and sweeten to your taste buds.

Pour into a clean sterilized jar and keep refrigerated.
